Greek Dip

I made this dip a few weeks ago and brought it to a party and it was a major hit!

 It is the easiest thing to make and with the hummus base and veggies, it is healthy!  

My mom saw the idea for this dip in a magazine a few years ago and made it for me.

 Then a few weeks ago there was a coupon for hummus in my paper that had a recipe similar to this on the ad which reminded me how much I loved it.  So many people asked me for the recipe, I decided to share it here.  With the holiday season coming up it is nice to have something easy and healthy you can serve your party guests!


Greek Dip- this version by me
Roasted Red Pepper Hummus- enough to cover the dish you are using
Handful of spinach (or lettuce), chopped
1 small tomato, diced
1 cucumber, peeled, seeded and diced
4 oz crumbled feta cheese
10 or so kalmata olives chopped
Pita chips

Spread hummus on bottom of platter.  Top with chopped spinach, tomato, cucumber, feta and olives.  With a small piece of wax paper press down on the top to mush everything together.  Serve cold with pita chips.

Made it today... awesome! You should post those pumpkin chocolate chip cookies... We're on our second batch!
