Pizza 101: deep dish pizza

In today's lesson we will learn how to make Chicago style deep dish pizza. I will show you my trick to a buttery crust and the proper way to build the pizza.  This is a nice pizza to make guests, there isn't any fancy oven work.  You can just put it in the oven and let it bake.

To get a buttery crust, coat the deep dish pan liberally with butter.  Pretend you are Paula Deen and go crazy!  Turn the dough out into the pan after it has doubled in size. Start pressing the dough towards the sides of the pan.

When you press the dough to the sides of the pan, make sure you press a ridge for the crust. 

 
The cheese goes on first.  Followed by your toppings.  Sausage is a typical chicago topping.  I brown my sausage but don't cook it all the way through. I let it finish cooking in the oven.

Top the pizza with a jar of pizza sauce mixed with a can of diced tomatoes.  Deep dish pizza had a chunky tomato sauce.  Sprinkle parmesan cheese and oregano on top.

Bake for 20-25 minutes at 450 degrees.

Slice in pie shaped pieces and grab the knife and fork!

Deep Dish Pizza Dough- recipe by me

Ingredients
2 cups flour
1 cup cornmeal
1 teaspoon salt
1/4 cup olive oil
1 cup warm water
1 packet yeast
1 teaspoon sugar

Measure out warm water and add yeast and sugar.  Let sit for 5-10 minuted until it foams.  Add all ingredients into a mixer bowl.  With the dough hook attachment mix on low for a few minutes.  When the dough starts to come together, turn the mixer on medium high.  Mix for 5 minutes.  If the dough is sticky, add a little more flour.  Spray mixing bowl with cooking spray and sprinkle some olive oil on the dough and let it rest in the mixing bowl. Cover the bowl with plastic wrap and a towel and let sit for an hour and a half and let the dough rise until it has doubled in size..  

Preheat oven to 450 degrees.  In a deep dish pizza pan liberally apply butter to the pan.  Press dough into the pan all the way to the sides making sure to create a ridge for the crust.  Mix a jar of pizza sauce and a can of diced tomatoes.  Top the pizza in this order: cheese, toppings, sauce, parmesan cheese and oregano.  Bake 20-25 minutes.
