loved these! They were like potato pancakes but I felt like they were healthy, you know as healthy a veggie fried in oil can be. :)
II made two versions of these, both delicious. One was Zucchini Cakes by Sam of Fitness, Food and Faith and the other was the Zucchini Fritters by Deb of Smitten Kitchen. They were both fantastic and crunchy on the outside. I am sharing both recipes because I would definitely make either recipe again. With all the zucchinis our garden gave us, I was glad to be able to try both recipes!
