Lox and Bagel with Tomato

Lox and low fat vegetable cream cheese on a toasted mulit-grain bagel with flaxseed topped with tomato and hard boiled egg. Add fresh cracked black pepper and a pinch of Kosher salt, and this is my favorite decadent breakfast.  I only eat it maybe 2 times a year.  But I love eating it at the end of summer when the tomatoes are fresh.
Lox and creme cheese by themselves are delicious.
The very thinly sliced tomato adds a freshness that just makes this even better.
I like to top it with hard boiled egg.  My brother likes to add thinly sliced onion into the mix too.  I'm not into onion, so this combo is perfect for me.  This is usually a special occasion breakfast for me, we sometimes eat it Christmas morning.  This time, there was no special occasion, I saw lox and bagel on TV.  Since I am the highly suggestible type, I had to have it :)

Love the lox, bagel and cream cheese, w/ hard boiled egg and fresh cracked black pepper with a pinch of Kosher salt. Planning it for my continental birthday breakfast this weekened, along with coffee and orange juice!
