Limoncello

It is summer and there is nothing better than enjoying some cold Limoncello on the patio after a hot day.
This recipe is a combination from Alton Brown and Giada De Laurentiis. After researching a few recipes I liked what both of these had to offer, Alton's steeping time and Giada's sweetness.

...after 8 days

all the zest gets really dry.
...the end result...
... so delicious!

Limoncello- Recipe inspired by Alton Brown and Giada De Laurentiis
zest from 10 lemons i used a micro plane
1 750 ml bottle 100 proof vodka i used Smirnoff
2 c sugar
2 c water

Take the zest from the 10 lemons and place in a glass container with the vodka. Cover with plastic wrap and place in a dry place for 10 days.

After 10 days make a simple sugar. Heat the 2 c sugar and 2 c water in a sauce pan on med/low heat and stir until the sugar is dissolved and the liquid is clear. Let cool completely.

Strain the limoncello:

First strain it though a mesh strainer into a work bowl to get all the big pieces.

Then place a coffee filter in the mesh strainer and strain the liquid a little at a time into another work bowl. i went though about 6 coffee filters.

When all the limoncello is strained, add the simple syrup and stir.

Use a funnel to refill the vodka bottle. You will have about 2c left over, either put them in another glass container or do what I did and use a jar...

...it looks a little suspicious though.

Place the bottles in the freezer for 4 hours before enjoying.
