I needed a side to go along with Chicken Gyros with homemade pitas.
I have been making these black pepper lime fries from framed with almost every meal. Really, we ate them 3 times last week. They are so delicious, and thought some lemon potatoes would go perfectly with gyros.
The lemon zest gave the potatoes a fresh summery taste.
Peanut Butter loved them! He wanted to keep eating them even after dinner was over.
Lemon Potatoes- inspired by Framed
1 russet potatoes per person into cubes.
3 T olive oil
1 t garlic powder
1 T kosher salt
1 t fresh cracked black pepper
1 t oregano
zest and juice from 1 lemon
Preheat oven to 400 degrees. Coat potatoes in olive oil and spices. Lay out on aluminum foil lined baking sheet that is lightly sprayed with cooking spray. Bake potatoes 20 minutes. Toss the potatoes and continue to cook until browned, another 20-30 minutes. Once the potatoes are out of the oven, squeeze the lemon juice over the potatoes and sprinkle the lemon zest. Toss to coat the potatoes. Add extra salt and pepper to taste.
