Oh baby, dark chocolate cupcakes with a creme filling and dark chocolate icing. This is the cupcake I have been dreaming about. These are so decadent and rich.
There were a few requests at the party for this recipe so here it is.
Dark Chocolate Cupcakes with Creme Filling and Dark Chocolate Frosting- Recipes by: Cupcake recipe by ming makes cupcakes #11 Dark Chocolate Frosting recipe by Beantown Baker (I used dark chocolate frosting instead of chocolate ganache)
Cupcakes:
1 c flour
1/2 c cocoa powder (i used dark cocoa powder)
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp salt
1/2 c butter
1 c sugar
1 tsp. vanilla
1 egg
3/4 c milk
Preheat oven to 350 degrees. Mix dry ingredients and set aside. Cream butter and sugar on medium until light and fluffy. Turn mixer to low and add vanilla and egg. Alternate adding the milk and dry ingredients. Pour into lined cupcake pans. Bake for 20 minutes until a toothpick comes out almost clean
Creme Filling:
1 stick room temp butter
2 1/2 c powdered sugar
1/4 c milk
1/2 tsp vanilla
dash of almond extract
Beat butter until smooth. Add sugar, milk, vanilla and almond. Beat until spreadable. Use a knife to cut a cone-shape out of the top of the cupcake. Cut the bottom off the cone, fill hole with creme and top with the remainder of the cone.
Dark Chocolate Frosting:
6 Tbsp butter
2 tsp vanilla extract
3 cups powdered sugar
3/4 cup dark cocoa powder
1/3 cup milk (or Baileys)
Cream butter and vanilla.
In a separate bowl, combine powdered sugar and cocoa powder. Add dry ingredients to creamed mixture.
