Cinco de Mayo Celebration: Shredded Beef and Rajas Quesadillas

In case you missed it, here is part one of the celebration.  All of our meat is ready, the rajas are ready to go and we have the base to today's salsa. Let's get cookin'!

The second recipe in this celebration is quesadillas.  There is nothing easier than a quesadilla.  We eat them every week and they are are go to meal when we have leftovers in the fridge.  My hubs is the quesadilla master and he is the cook behind this recipe :)

PB loves "dillas" (quesadillas) and has just got into cooking with us. Anytime Hubs makes "dillas" PB grabs the stool and climbs up to help.  He claps after every "dilla" is made.  And no I didn't force my hubby to wear an orange shirt for pics. :)

Shredded Beef and Rajas Quesadillas- recipe by ME and my hubby :)
Ingredients
flour tortillas
Queso Blanco, shredded
shredded Mexican cheese
shredded beef 
rajas
Chipotle Tabasco Sauce
Mexican Oregano
Here is a peek at how hubs makes quesadillas.  He oils the outside of the tortilla and layers cheese, beef, peppers.  Then he adds his "secret" ingredients: a few squirts of Chipotle Tabasco and a few shakes of Mexican oregano.  Then he tops everything with more cheese, folds the tortilla in half and cooks it on the electric griddle until golden brown.  
Hubs mixed the Queso Blanco and shredded Mexican cheese.  
It was a very delicious combination.  

The quesadillas were served with some roasted corn and black bean salsa and guacamole.
Roasted Corn and Black Bean Salsa- recipe by me
1 c. frozen corn
1 can black beans
1/2 the pico de gallo recipe from yesterday's post
juice from 1/2 lime
pinch salt

Roast corn under the broiler on a pan lined with aluminum foil and coated with spray oil.  Time will vary.  I did this in the toaster oven and turned the corn every 5 minutes.  Let corn cool.  Rinse and drain the black beans.  Stir beans and corn into pico de gallo and add lime juice.  Salt to taste.

I drained the juice from the pico de gallo and saved it for my Bloody Maria.  I wanted to serve something different than the typical margaritas.  I am not a huge fan of tomato juice and this option was definitely lighter and very tasty. 

PB says these dillas are "licious."
